I could eat coconut rice for breakfast, lunch, dinner and snack! It soothes and fills any grumbly belly. Switch up your meal routine and sauce up that rice!
Yield: 3 cups
2 cups water
1 cup rice
1-2 tablespoons cream of coconut
1/4 teaspoon nutmeg
1/2 teaspoon Saucier Willy’s Virgin Islands Rub
½-1 tablespoon Saucier Willy’s Pineapple Mandarin Preserve per serving
Use 1 tablespoon of high potency canna oil/butter or a prepared cannabis/hemp concentrate, i.e., distillate to medicate this recipe. Add it with the other ingredients in the pot.
Add the water, cream of coconut, nutmeg, and Saucier Willy’s Virgin Islands Rub to your pot of water.
Melt the cream of coconut (if using, add canna oil/butter here) and then add the rice.
Cook rice using the directions on the package.
When cooked fluff with a fork and spoon into a bowl.
Top with Saucier Willy’s Pineapple Mandarin Preserve.
Garnish with freshly grated nutmeg and fresh mint.
