Vegan Mayo

Mayo is traditionally made with egg yolks and a slow and steady process of adding oil that can take several minutes to complete. What if I told you that you could make it in under 20 seconds? Yes, it's vegan, but I can guarantee that you wouldn't be able to tell. Enjoy as is or use this base recipe to make a variety of dishes from dips to creamy vinaigrettes!

Yield: 1-1/4 cup

Ingredients

 1/2 cup soy milk

1 cup avocado oil

1 teaspoon Dijon mustard

2 teaspoons white vinegar

Salt and pepper to taste

Equipment

Immersion blender

Mixing bowl

Spatula

Optional

Sub white vinegar for apple cider vinegar, red wine vinegar, etc.

Sub avocado oil for any oil you prefer.

Add 1 teaspoon of lemon zest to your mayo for a subtle citrus flavor. 

Medicate It

Use cannabis infused oil in this recipe. 

How To

Add all of your ingredients to a mixing bowl.

Use an immersion blender for 15 seconds to blend everything together.
