Creamy Cheesy Balls of Meat
Of course, you could simply buy a bag of frozen meatballs from your local grocery store, but then you would miss out on the experience of caressing your meat, incorporating freshly cut herbs, and forming perfect balls that, once cooked, will fit ever so nicely into your mouth. However, you can’t have a meat sphere without sauce! Rich and creamy Bourisn cheese blends its own hint of herbs and garlic that truly coat these little meat nuggets the way they deserve to be. With this recipe, you can choose to share your balls or keep them all to yourself.

Yield: 47 – 1oz balls
Ingredients for the Meatballs:
1 cup panko breadcrumbs
1 pound ground beef
1 pound ground pork
2 tablespoons chives
1 teaspoon rosemary
1 teaspoon basil
1 teaspoon thyme
2 eggs
Salt and pepper to taste
Ingredients for the Cream Sauce:
1 pint half and half
1 oz clarified butter or ghee
1 oz all-purpose flour
2 oz Boursin Cheese
Salt and pepper to taste

Sub the ground beef/pork with any other ground protein.
Serve with fresh arugula and grape tomatoes tossed in balsamic glaze.
Medicate It
Sub the regular butter in the cream sauce for your infused canna butter. Use however much canna butter you need to reach your desired dose of medicine.
How To
Meatballs:
Preheat your oven to 350°F. Lay parchment paper on a sheet tray.
Mix all ingredients for the meatballs in a bowl.
Using the scoop, portion meat into 1 oz balls and lay them onto the sheet tray.
Place in oven and cook for 10 minutes. Remove from the oven and rest.
Cream Sauce:
Warm half and half in a small pot.
In a separate pan, melt the butter. When melted, add flour to the butter to create a roux; whisk to incorporate. Cook your roux for 2 minutes on medium heat.
Slowly add the warmed half and half to the roux, whisking constantly until the roux is completely mixed in. Cook for 2 minutes, whisk periodically.
Turn off the heat and add the cheese, salt, and pepper to taste; whisk to incorporate.
