Flaming Chicken

1 Chicken Breast

2 fresh Pineapple rings

2 slices of Heirloom Tomato

10 sprigs of Cilantro

1/2 cup of Mayo

1/2 cup of Arugula

Kaiser Roll

Saucier Willy Devil's Blood (to your liking)

1 tsp.(est.) Saucier Willy Virgin Islands Rub


Fire up your grill to get it nice and hot.

Pound the chicken flat and season to your liking with Virgin Islands Rub.

In a blender, pulse your cilantro and then fold it into the Mayo until everything is incorporated. Place your herb mayo in the fridge for now.

Put your chicken breast on the grill and cook it until it reaches an internal temperature of 165 degrees. Remove the chicken from the grill and let it rest for 5 minutes on a plate. Lightly grill the pineapple rings.

"Pull" the chicken while it is still hot and then toss with Devil's Blood. Spread your cilantro mayo on both sides of your Kaiser roll. Top with your flaming chicken, grilled pineapple rings, tomatoes, and arugula.
