Flaming Chicken
In our house the chicken sandwich is king! It can be dressed up, dressed down or its simplicity enhanced and appreciated. Enjoy this one decked out in the finest of summers culinary delights!

Yield: 1-2 servings
Ingredients
1 chicken breast
2 fresh pineapple rings
2 slices of heirloom tomato
10 sprigs of cilantro (leaves only)
1/2 cup of mayo
1/2 cup of arugula
1 kaiser roll
1 tablespoon coconut oil
Saucier Willy Devil's Blood (to taste)
Saucier Willy Virgin Islands Rub (to taste)

Use liquid coconut oil to skip the heating step.
Medicate It
Sub canna coconut oil for the coconut oil or add a prepared cannabis concentrate, i.e., distillate, oil infusion (use however many droppers needed to reach your preferred dose) to medicate this recipe. Add 1/8 teaspoon of liquid sunflower lecithin to the coconut oil and add it to the other ingredients when it can be mixed with a gentle swirling motion.
How To
Fire up your grill and get it hot.
Pound the chicken flat and season to your liking with Virgin Islands Rub.
Heat coconut oil until liquid over the stove-top or in the microwave in 10-15 second intervals. If using infused coconut oil, add 1/8 teaspoon liquid sunflower lecithin to your warmed coconut oil and set aside.
Add mayo and cilantro to a mixing bowl, use immersion blender to blend up the herbs, add the coconut oil/lecithin mix and continue to blend until everything is incorporated. Place your herb mayo in the fridge to rest.
Put your chicken breast on the grill and cook it until it reaches an internal temperature of 165 degrees. Remove the chicken from the grill and let it rest for 5 minutes on a plate. Using two forks, "pull" the chicken while it is still hot and then toss with Saucier Willy’s Devil's Blood Hot Sauce. Lightly grill the pineapple rings.
Spread your cilantro mayo on both sides of your Kaiser roll. Save the remaining herb mayo for another sandwich! Top with your flaming chicken, grilled pineapple rings, tomatoes, arugula and put it in your belly!
